How do you present yourself when people talk about you in your profession?
People definitely say that I am a chef, a restaurateur and the owner of the restaurant Chez Livio in Neuilly.
What is the thing said about you as a leader then, that particularly touches you?
Let people say that I am passionate, passionate about my job and everything it entails. and that I am demanding.
What matters most on a daily basis in your restaurant?
I work so that my customers are happy, so that my staff are happy too. I like working in a team, I like our supportive atmosphere. If you ask me to choose a moment, I would say that I prefer the atmosphere of the evening service, the people are obviously more relaxed, more serene.
le gram is a lifestyle brand for men, it offers essential objects, and in your profession what is the iconic element, the one that symbolizes you?
my knives obviously. These are Japanese knives that I have had for 10 years, that I love, I only work with them, they have acquired a patina over time, that makes them even more beautiful.

I have two bracelets, one 15g and one 33g, both smooth polished in 925 silver.
how do you wear them?
I wear them together but I reverse the smaller one by wearing its opening on the top of the wrist.
If le gramme was a dish then… what would it be?
a very direct, simple and beautiful dish.
What is the gift you would like to receive soon?
there is a large Knoll marble table that I really like, it is very essential and classic, I like the quality of this object, its material which is marble, its very simple design from the foot to the top. and if I can dream a little, I would say an old collector's car like a real Ferrari 250 GT.

what's the next gift you're going to give?
I love to please and therefore give gifts. I will give my wife a perfecto jacket, otherwise I will also give her some jewelry; I often give jewelry per gram to my father and friends. and then I also like to offer clothes, a Steve Mcqueen-style suede jacket recently, or shoes. I must be a good friend...
what is your favorite object? how much does he weigh ?
It's a bracelet worn by my brother for ten years, until November 13 when we lost it at the bataclan. a century-old bracelet that comes from a Malagasy tribe. it is made of silver. When my brother died, I had several copies reproduced there and I had his ashes placed there, because this type of bracelet was designed for that. those who loved my brother form a sort of clan, and this bracelet is one of its symbols.
what is important in your life?
family, friends, always. more than work despite the passion I have for it.
a favorite place to be at the moment?
on my sofa, with my wife and my dog, a little Australian Shepherd and a Burmese dog. perhaps on the trifle plain for a walk with my dog, otherwise on a golf course.
